Nutritional and Therapeutic Uses of Seaweeds - 1/9/27

Spend the afternoon discovering how delicious and beneficial seaweeds are with Herbalist Ava Long. During this workshop you’ll learn how to identify different types of seaweed and explore their traditional uses in herbalism, as well as their benefits for gardens and plants. We will cover their rich nutritional value—and discuss the minerals, vitamins, and trace elements that have long been an important food source.
Ava will discuss intertidal and subtidal sea vegetables. She will cover rockweed, bladder wrack, focus, Irish moss, sea lettuce, dulse, red seaweeds, and more! There will be sampling of different types of seaweeds, a conversation about how these mineral rich plants are harvested, the best times to harvest, and the best methods for harvesting.
Ava will demonstrate how to make Irish moss blancmange for everyone to try and she will teach you how to make the equivalent of wheatgrass juice using Maine seaweed green powder! Ava will also teach participants how to make a table spice similar to furikake for everyone to take home and enjoy!
This workshop you will provide practical skills for incorporating seaweed into everyday cooking and using it in simple, nourishing skincare products. After this class you will see these ocean plants in a whole new way and have a deeper appreciation for all they do and provide.
Ava Long is a clinical herbalist and founder of Maine Sea Greens, a seaweed spice company. Ava grew up learning about seaweed through her father, Robert Morse, a pioneer in the seaweed industry who founded North American Kelp in Waldoboro, Maine.
Ava has expanded her expertise through participation in international seaweed conferences, including Seaweed4Health in Cork, Ireland; Seagriculture in Portland, Maine; and Seagriculture Europe in Gothenburg, Sweden—staying connected to global advancements in seaweed research, sustainability, and industry practices. She attends Seaweed Week in Portland ME every spring.
In her work, Ava combines traditional herbal knowledge with practical, everyday applications. She grows her own herbs, formulates herbal preparations, and teaches others how to incorporate natural remedies into daily life. Through Maine Sea Greens, she brings seaweed into the kitchen in a way that is approachable, flavorful, and nutrient-dense. She continues to harvest seaweed alongside her father while exploring innovative ways to use and share this resource.
Ava lives in Rhode Island with her husband and continues her studies in herbal medicine.
